Heal Your Gut & Boost Your Immunity With Thai Carrot Soup


  • 2 tablespoons of olive oil or ghee
  • 1 large onion
  • 1-inch slice of fresh ginger
  • 1 ½ teaspoon of curry powder
  • ½ teaspoon of salt
  • 3-4 cups of beef broth or water
  • 2 pounds carrots
  • ¼ cup of coconut milk

How to Prepare Thai Carrot Soup

  1. Heat a stock pot on medium heat
  2. Add olive oil
  3. Dice the onions and cook in the oil for 5 to 8 minutes until translucent
  4. Add ginger (peeled and grated, about 1 teaspoon), curry powder, and salt
  5. Stir to mix evenly
  6. Add the beef broth or water
  7. Add the carrots
  8. Bring to a boil, then simmer for 15 minutes until carrots are soft
  9. Add coconut milk and stir

Additional Tips

  • Stir 1-2 tablespoons of fresh lemon juice to vary the taste
  • Garnish with parsley
  • Blend soup to desired consistency and thickness. Some people like soft carrot chunks, others prefer it blended
  • Best served with goat cheese, pesto, cauliflower rice
